BREKKIE MUFFINS ● AUNTIE BARBARA’S RECIPE
there has been a lot of baking going on in this house lately… pregnancy seems to be the culprit. so i dug up my Auntie Barbara’s Meal in a Muffin recipe, it definitely hit the spot! savory, cheesy, bacon-y goodness all wrapped into one. i decided to make them for a little Valentine’s Day breakfast treat (i cut hearts out of the bacon strips) and it just so happens to be Aunt Barabara’s Birthday (rest her soul). just brings a smile to my face thinking how happy it would make her to know our baby is craving these already. Happy Birthday Barbara and Happy Valentine’s Day everybody.

Brekkie Muffins
1/4 cup butter
1/2 cup green onion thinly sliced
1 clove garlic, minced
2 cups flour
1 Tbls. baking powder
1 tsp. salt
1/2 tsp coarsely grown black pepper
1 cup milk
2 eggs
1 cup (4 oz.) diced cooked bacon or ham
1/2 cup diced cheddar cheese
● preheat oven to 375° and generously grease or line muffin cups.
● in a large skillet melt butter and add onion and garlic. cook until onion is translucent. in a large bowl combine flour, baking powder, salt and pepper. Sift the flour if you’re feeling fancy.
● in a small bowl whisk together eggs and milk. add milk mixture, onion with drippings, bacon and cheese to the flour mixture. stir until just moistened.
● spoon into muffin cups (fills about 9 cups nicely)
● bake for 15-20 minutes.
